Borage Borago officinalis

With edible, blue-purple flowers that taste like cucumber, borage Borago officinalis is a lovely and interesting addition to salads, soups, and drinks. It has long been associated with bravery, and Celtic warriors drank borage-flavored wine for courage in battle. A tea made from the leaves is also reported to be good for stress or exhaustion, since it has a calming effect.

The star-shaped flowers of borage are an attraction for bees, as well as a lovely addition to a garden, and they were once a favorite subject for needlework patterns.
